Mr Rebert Joyce, who has been inquiring why New Zealand butter is higher priced on the London market than Queensland butter, asserts that this is primarily due to habit. There is little diiference in the actual value of the best Queensland and New Zealand butters. One detrimental character of Australian butter is its extremely solid texture, making spreading difficult, and it is thus not acceptable for restaurants or domestic trade, but it is acceptable to blenders. Further, as Queensland butter is available on the British market for only six months of the year, it is therefore useless for any British house to specialise in it, while New Zealand butter is available for a longer period.
