TO-DAY’S RECIPE.
A NEW' KIND OF OMELET. Ingredients: 3 or 4 eggs, 4 tablespoonsful flour, a lump of butter, milk as required, sugar, 4 apples, a handful stoneless raisins. Beat the eggs well; add the flour and beat again till smooth. Mix in the butter—melted but not hot—sufficient milk to make a thin cream, and sugar to taste, according to the sweetness of the apples. Peel, core and grate the apples; add them to the mixture with the cleaned raisins. Mix well. Grease a pudding dish, turn the mixture in, and bake in a moderate oven till set and beginning to brown. Turn on to a dish, sprinkle with sugar, and serve hot.
