PECAN FINGERS Tiny, rich cakes, favourites for tea parties in Alabama and Georgia (where pecan trees grow in everyone’s yard), should find favour, too, with New Zealand hostesses. The little cakes will stay fresh for several days. The ingredients required are pecan nuts (which are obtainable here), 21b butter, 5 tablespoons powdered sugar, 2 cups flour, 1 tablespoon ice water, 1 tablespoon vanilla. The method is to cream the butter and sugar, add the flour, mix m liquids. Flatten a small ball of the dough in the palm of one hand. Lay two pecan halves end to end in the centre, and roll the dough over them. Bake in a moderate oven. Roll lightly in powdered sugar. This recipe makes fifty little cakes.
