TODAY’S RECIPE

HOLLAND BRIOCHE CAKES 1 cup scalded milk. 3oz sugar. ioz (1 teaspoon) yeast. 6oz flour. loz butter. 1 cup (2loz) melted butter. 2 eggs. | teaspoon salt. I grated lemon rind. Juice of J lemon. li cups flour.

Add sugar and butter to scalded milk, and when lukewarm add to yeast and stir till dissolved, Pour liquid into flour, and stir till well blended. Cover and let rise till full of bubbles (nearly double its bulk). Add well-beaten eggs and, remaining ingredients. Knead. Place in greased bowl, cover, and allow to rise. When double its bulk toss on to a floured board and knead. Roll out into a rectangle J inch thick. Spread with melted butter, and fold from opposite sides to make three layers. Cut off strips J inch wide. Cover and allow to rise. Take each piece separately in the hands and twist from ends in opposite directions. Coil as if to form a circle, but bring ends up on top of coil. Allow to rise for a short time’ on a greased tray. Bake in oven at 400 degrees F. When cooked brush over with icing made from icing sugar, vanilla and boiling water, SARAH.
