TODAY’S RECIPE

BAKED STUFFED CUCUMBERS 6 cucumbers. 2 cups stale breadcrumbs. 1 egg. 1% teaspoons salt. 1 cup hot water. 1 tablespoon minced onion. 6 mushrooms (if in season). Pepper to taste. 1 teaspoon marmite.

Select six small cucumbers. Peel thinly and cut a slice lengthwise from each. Chop up these slices finely and mix with the breadcrumbs, beaten egg, salt, pepper, onions, finely-chopped mushrooms, of if mushrooms are not in season use quarter of a pound of finely-chopped cooked meat. Scoop out seeds from interior of cucumber and fill the shells with the stuffing, rounding up the mixture slightly. Bake in an oven 350 degress F. for 45 minutes or until tender. Baste occasionally and serve with a parsley sauce made from 2 tablespoons butter, 2 tablespoons flour, -J teaspoon salt, oneeighth teaspoon pepper, 1 cup milk, % cup finely-chopped parsley.
