LETTUCE SALAD
One lettuce, half a beetroot, half a Spanish onion, cress, one egg (boiled hard), salt, mustard, cayenne, vinegar, olive oil. Pound yolk of egg, salt, mustard, and cayenne together; add one tablespoonful of vinegar, and stir in ; then one tablespoonful of olive oil or cream, half a teaspoonful of stigar, and the white of eg gminced. Cut the lettuce small, also onion, with the cress and sliced tomato or beetroot. Pour dressing over the lettuce, etc.
