FRUIT BUTTER

Have you ever tried fruit butter ? It is made in almost the same way as jam, except that the juice is strained off and only the pulp used. But the juice need not. bp wasted. It makes an excellent, fruit drink in thirsty weather. Pears, plums, apples ■ and gooseberries can all be turned into a delicious spread for t-?a. Here is the recipe for gooseberry butter. as this fruit is plentiful now. Top and tail and wash 61b. of berries and cook them in a quart of water until tender. Mash or press through a sieve, weigh the strained pulp and add to this one-half its weight of brown sugar. Bring to the boil and stir for two or three minutes. A delicious flavour is given by blending a little mixed spice to the boiling pulp.
