STRAWBERRY RECIPES.

Strawberry Mousse.—Now that strawberries arc onco again in season this will make a pleasing change for a sweet, course. Take lib. strawberries, A tablespoonful gelatine, 1 tablcspoonful hot water, one-third cup sugar, 1 tablespoonful cold water, 1 pint cream.

Crush strawberries and sprinkle with sugar. Let stand for one hour. Soak gelatine in cold water, then dissolve in the hot water; add to strawberries. Whip to a stiff froth. When the strawberry mixtur begins to set, pour in the whipped cream. Servo very cold. This delicious sweet may also be made, from loganberries, raspberries or very ripe peaches.

Strawberry Shortcake. This is an American recipe, and the pieco de resistance at tho American Women's Club in London. Tho ingredient are:—Two cups of flour, 2 level tablespoonfuls of lard, 2 level tablespoonfuls ot butter, £ teaspoon salt, 4 level teaspoonfuls baking powder, 3 cup milk.

Sift flour, measuro and sift again with the salt and baking powder. Mix in the lard and butter, then add the milk slowly. Roll out on a floured board inch thick; bake in two tins in a hot oven for fifteen minutes.

Stalk lib. of strawberries, cut in pieces and cover with powdered sugar. Butter tlio shortcakes generously, spread the sugared berries between tile layers and on top. Serve with cream; or tlio short cako may bo topped with whipped cream. Cutup marshmallows may be added. < Strawberry Shortcake (3-layer cake).

Take 1 cup sugar, 1 egg, 4 tablcspoonfuls melted butter. Mix this well, then add 1 cup of milk, in which 1 level teaspoonful of bicarbonate of soda has been dissolved. Lastly add two-thirds of a cup of flour with 2 teaspoonfuls of cream of tartar; bako in two tins in n quick oven

Crush lib, of strawberries and sweeten to taste with powdered sugar, put between layers of cako; add some strawberries on top and sprinkle with powdered sugar. Do not, put together until it is time to serve.
