A little flaked rice added to scram bled eggs is a decided improvement. In addition to improving the flavour and firming the scramble, it makes them go farther —a decided benefit in large fam ilies. Allow a teaspoonful of the rice to each egg. The secret of boiling rice so that each grain is whole and separate is to cook in plenty of water, and allow to boil at a brisk rate. Be careful not to over-boil rice. The moment it is sufficiently cooked, strain through a colander. It becomes sticky if overcooked. Left-over boiled rice can be used as a vegetable. Re-heat, arrange in little mounds on each plate, season with pepper, salt and butter, garnish with a surround of carrot cubes.
If you dip your knife occasionally in ground rice while chopping suet, it will uot stick to the blade.
A little ground Tice added to batte* will make it lightei and less apt to gc sodden than the all-flour batter.
