Dairy Factory Managers Confer

INSTITUTE WEEK CONTINUED. All day yesterday dairy factory managers in conference at Massey College at tlie invitation of the Dairy Research Institute, listened to lectures on intricate subjects connected with tlio manufacture of butter and cheese.

In the morning Dr. 11. R. Whitehead spoke on bacteria in relation to butter and Professor W. Riddet explained to eheesemakers the importance and control of acidity and moisturo in cheesemaking. The chemistry of acidity in eheesemaking was gone into by Dr. F. 11. McDowall and Dr. R. M. Dolly/, while there were demonstrations in the bacterial laboratory for buttermakers.

In the afternoon Mr. J. W. Smith spoke on refrigeration in dairy factories and this address was followed by an inspection of the factory at'Massey College and its equipment.
