SWEET ORANGE OMELET Beat up one egg, adding ono tablespoon of orange juice and two teaspoons of grated orange rind. Peel an orange, remove all the white membrane and cut into very thin slices. Sprinkle these with a large teaspoon of castor sugar. Melt two teaspoons of butter in an omelet pan. Pour in the egg mixture and cook over a low heat, shaking the pan and pricking the mixture with a fork until it is cooked. Roll or fold and turn out on a serving dish, surrounded with the sugared slices of orange. Dredge a little more sugar over all immediately before serving. This is very good for an invalid.
