MASTER BAKERS' CONFERENCE.
The animal meeting of tho Master Bakers' Association of New Zealand was concluded in Palmerston yesterday. Representatives were present from all parts of the Dominion, Mr Kellow, of Wellington, being president. He, however, declined rc-oleetion, and Mr Geo. Smerdon, of Auckland, was elected to the position. The following officers wero also elected' Vice-president, J. T. Norton; secretary, C. J. Knox; treasurer, A. Kent; committee, W. Buchanan, J. Till, B. Lane and T. Hosking. Mr Norton is of Lyttelton, all the others are of Auckland. The headquarters of the Association have been shifted to Auckland. A special vote of thanks was passed to Mr Kellow for his nine years of sei . vice to tho Association and to Mr Allen, the retiring secretary. The main matter discussed by the conference ; was tho weight of bread. It appears that at present groat difficulty is experienced in ensuring even weight. Owing to the unevenncss of the ovens more moistuao is dried out of some loaves than others, and bakers are facod with the possibility of prosecutions 'torn this cause. It was unanimously agreed that instead of a standard loaf being fixed a standard weight of dough for each loaf should be the test, and it was decided to ask Government to amend existing legislation in this direction.
