DAIRY CLASSES.
SCIENTIFIC AND PR ACTICAL WORK. At a meeting of dairy farmers and directors of factories held recully in Stratford, it was decided to proceed with the work of instructing workers in factories in the scientific principle® of dairy work, and in. the practice of butter and cheese-making. A committee set up at the meeting has approached the board of governors of the Stratford Technical High School, which body is prepared to hold a winter class extending over about six weeks for the purpose of helping those who are engaged in this important industry. Briefly, the proposal is to give laboratory work in dairy science, and to do practice in a, factory. Competent and suitable men have been recommended for appointment to take charge of the classes, and an excellent- opportunity is open to those who, wish to become more proficient in their work. Those who wish to enrol for the course of work should apply immediately to the director of the school, as the time is short, if advantage is to be taken of the offer during this winter. The classes will begin as soon as possible, the probable date being July 7th to August 16th.
