CANNING OF EELS

PROPOSED MEW INDUSTRY A potential source of highly nutritious food which has received little attention in the past, the canning of fresh-water eels for export, is now proposed as a new industry in Southland. Various efforts to commercialise eels in the past have been abandoned after trial. Eels have been salted, frozen, and canned, and from time to time consignments have been shipped to England. Frozen eels of a value of £356 were exported to Australia in 1944. Previous attempts at securing an overseas market have apparently failed for several reasons. An absence of professional eel-fishermen and the collection and transport of eels to a suitable depot created problems which were difficult to overcome. There has always been a steady demand for eels in Britain, and they have been a popular food on the Continent.
