Beard the oysters, butter the scallops, sprinkle with white breadcrumbs, place several oysters in each scallop, sprinkle with very little salt, lemon juice, 2 drops of Lea and Perrin’s sauce on each scallop. Cover with breadcrumbs, place several dabs of butter on each. Bake in hot oven for 10 minutes until golden brown. Servo in shell garnished with cut lemon and parsley. Do not use more than two drops of Lea and Perrin’s sauce to each scallop, or you will spoil the flavour of the whole dish. Lea and Perrin’s is highly concentrated.
