This is very easy to make, an is delightfully cooling ou warm sunny days. Allow one egg, the juice of lialf u lemon, and a dessertspoonful of castor sugar t.o each person. . 1. Separate tbe whites of eggs from tbe yolks.

2. Beat the yolks, sugar and lemon juice together, and pour into a saucepan. 3. Stir tbe mixture over a low beat until it thickens slightly, then pour into a bowl aud leave to cool. 4. Whisk the whites very stiffly and when the yolk mixture is nearly cold stir tbe whites iu quickly. 5. Put into custard glasses, and serve as soon as possible.
