At a meeting of the Riverdale Dairy Company, a shareholder said the over-run was set down in the report at 9.3, whereas all scientists nowadays agreed that the minimum sliduld bo about 12 per cent. The difference must bo a loss to. tho company. This would represent a big sum. How was the small over-run accounted for? Tho chairman (Mr. T. H. Collins) said ho did not think any manager could guarantco 10 or 12 per cent. The over-run had varied considerably. To realise moro over-run meant that moro water should be run into the butter. This seemed a peculiar process, but even if tho manager succeeded in working a big quantity of wa'ter into' the butter he would lose on tho grade notes. Other companies seemed to get on all right with a big over-run. But tho question was really beyond him. He could toll them, however, that if one point only was deducted from the test it would raise the over-run three per cent.
