CURED AND PRESERVED MEATS.
The Canterbury Frozen Meat Company sent a very fine assortment of their preserved meats, including a novelty in thg shape of peeled sheep's tongues. In these tins the tongues have been deprived of the skins, and epicures speak very highly of them as being first rate. The Company also exhibit boiled beef, spiced beef, roast beef, ox tongues, &c.
The bacon and hams throughout were of splendid quality, the judges being very pleased with the display made. Mr F. A. Cook, in the smoked b:u:on, had two very nice ditches, well fed and cured. Two good flitches were exhibited by'Kincaid's G.1.C., the meat being of excellent quality, firm and well fed. The Canterbury Frozen Meat Company hid a nice exhibit of the streaky order, so much fancied by connoisseurs. In the unsmoked bacon classes the same exhibitors had some excellent meat of .prime quality. The roll bacon was very fine, the exhibits of F. A. Cook, Kincaid's G.I.C. and the Canterbury Frozen Meat Company being so even in quality that the judges must havo had considerable difficulty in arriving at a decision. Mr W. Henderson sent an exhibit of spiced beef, which \ looked excellent. In the classes for hams the competition *w'a3 "confined to the same exhibitors as in the bacon. All the exhibits were of excellent quality, being plump, lean, and of good flavour. The Canterbury Frozen Meat Company sent a good exhibit of lard, well packed and in excellent order. ...
