WAIKATO BUTTER.

CLOVER FLAVOUR NOTICED.

(Prom Our Correspondent.) HAMILTON, Friday. The unusual experience of a dry early slimmer in the Waikato has had a detrimental effect on the quality of the butter produced. Owing to the lack of rain the ryegrass in the pastures did not come away, and what growth developed was soon eaten. The dry weather favoured the growth of white clover, which has become a dominant feature of the pastures.

The clover has been growing in profusion, and clover flavour is markedly noticeable in recent makes of butter. When the season opened the grading was high, but graders have since had to mark down the quality. Clover flavour is giving much concern to manufacturers.
