MAKE SOME JAM,

Take advantage of the cheap price of melons, and make some preserves. Try this recipe:— This way of using melon makes a, delicious preserve: 101b of melon, 81b qf sugar, 2oz of whole ginger, 2oz of preserved ginger, 4 lemons, 4 oranges. Alb of almonds, 1 quart of water. Cut the melon into pieces about 2in square, and let it stand all night in sugar. In the morning, cut up lemons and oranges in slices as thin as possible. Bruise the ginger, and add all the ingredients to the melon. Boil for 2J hours, stirring as little as possible. Melon and Pineapple Jam. Take 61b of melon, 3 lemons, 61b of sugar, 1 large Jib of preserved ginger, 1 pint of water. Cut the lemons very finely, cut the melon and pineapple into small dice. Put over the whole 21b of sugar, and stand overnight. Add the water, and simmer gently till [ the fruit is quite soft. Add the preserved ginger, cut small, also the 'emaining feugar. Dissolve without loiling, and then cook gently till it 'jells." j
