DECORATION OF DELICACIES. When preparing party delicacies much depends on their dainty and appetising appearance. Very little trouble is needed to produce effective results. For instance, a child's birthday party may be considerably brightened by a novel birthday cake. A plain rainbow cake can be completely transformed by artful decoration. Place strips of almond paste over the cake to resemble a paper wrapping, add the name and address in coloured icing and the novel effcct of a parcel ready for posting is thus produced.

"Shortbread may be decorated in many ways. Shortbread dominoes are both attractive and simple to make. Merelv cut the shortbread into domino shapes, cover with chocolate icing and add dots of white royal icing. A dainty decorative effect may be produced by cutting shortbread into oblong slices, covering with red jelly and laying strips of the sweetmeat in the form of lattice work across the top. Brush this with egg, sprinkle sugar over it and cook in a slow oven. Meenish cakes, made of almond meal and icing sugar, bound with the white of egg and iilled with sweetened and whipped cream, make delicious party delicacies. These may be iced in various colour and daintily ornamented with flowers made of icing sugar.
