Sir Herbert Cep, who recently inquired into the price of bread m the metropolitan area, submitted a report to the Government, which discloses no exploitation of the consumers by bakers. Sir Herbert emphasised that the bread-baking industry in. recent years had been subject to the fiercest competition and embarrassing variation in the price of flour, due mainly to tax and levies. Based on the present price of Hour, £lO 17s (kl a ton, the average cost of manufacture and distribution of a 21b loaf is 4.471 d, and the average profit is .063 d. The price at which bread is being sold over the counter varies from 31 d to 4)d per 21b loaf, while delivered it varied from 3|d to 6d. There are approximately 400 bakers establishments in the metropolis, using 90,000 tons of flour annually and producing 120,000,000 21b loaves of bread, and providing work directly for about 3000 employees. ' Sir Herbert recommends the fixation of the price of bread in accordance with the rise and fall in the price of flour by means of a formula provided in his report.
