MEAT SCALLOPS
If you have cold beef or veal lo use up. then why not have local seal lops'.' Half a pound of the meat will go quite a long way—it xxill bo enough lo lill six or seven scallop shells. Gul the meal, into small squares and heal xviili a gill of brown sauce. Season, and, if you like, add a leaspoontul of sherry, which xvill make a great-im-provement. Grease the shells and All them with the mixture, piling it higher in the centre than at the sides. Sprinkle over each some brown bread crumbs and a little grated cheese, and put a small piece of butter on the lop. Put in a hot oven for about seven minutes. Garnish with a sprig of parsley and a small piece of lemon.
