DAIRYING INDUSTRY.

STANDARDISED CHEESE. DECISION OF SUNNY PARK. MATAMATA, Friday. The Sunny Park Co-operative Dairy Company, Limited, Te Poi, has decided to cease manufacturing standardised cheese for the present and to make nothing but the- fulll-milk article until further notice. The chairman of directors, Mr J. Bell, stated to-day that all the directors and the manager were convinced that standardised cheese, properly, made, had everything to commend it. Standardisation provided a cheese of uniform quality for marketing, and secured for those farmers’ milking high-testing herds the full fruits of their labours. The defects being complained of were present in New Zealand cheese before standardisation was adopted. Unfortunately these defects were'' accentuated last year through the bad season, and because a few factories took advantage of standardisation and allowed too. much moisture content, which weakened the body of the cheese. The decision to discontinue making standardised cheese.at Te Poi was for the present only, as the management felt that it was of little use making an article which buyers did not want. If a premium were offered for full-milk cheese the directors-would be in a position to secure it. A reversion to the standardised article might be made later in the season. '

The manager of the factory, Mr H. Madsen, who has had experience in Denmark and other countries, said that, if fairly made, there was nothing wrong with the standardised article.
