ANOTHER BUTTER-FAT TEST.

Mr Angus Mackay, the well-known Instructor in Agriculture of the Sydney Technical College, has during recent years given the subject of milk and cream testing much attention. The result of a long series of experiments has been that Mr Mackay favours the use of a liquid, of which wc think ether is the chief power, in ordinary graduated test tubes, He places the milk or cream and liquid in the tube, which is about 18in. in length and |iu, in diameter, A little shaking mixes the fluids. The glass is then . corked and placed in a warm, bath at 110', where it remains three minutes, until the butter fat rises to the top of the tube, which is next placed in a cold bath for a few minutes, The entire process takes only a few minutes, and shows the butter fat 8)lidly afc the top and the caesine at th« bottom of the tube. The cost of each test will be about 2d, and it is within the scope of any fanner of ordinary in- • telligence to make the test. There is nothing novel in the operation of testing in this way, except the discovery that certain proportions of certain liquids make correct results and may te simply applied. Mr Mackay expresses his willingness to give any farmer who desires to try the testing work full instructions 08 to the way in which the work should Jbe done.—Sydney Mail.
