DRIED BUTTER POWDER.
LATEST GERMAN "SUBSTITUTE.” Germany is the classic land for "substitutes,” and the inventive genius of the Fatherland is particularly busy just now in discovering things to take the place of certain articles of food of which the prices are exceedingly high. Substitutes have been found for innumerable commodities, and fortunes have been realised from their sale. Hitherto butter and margarine have successfully held their own, and prices have risen steadily. Now, however, a change is promised, as a Berlin newspaper advertises a so-called "butter-powder.” Fourpennyworth of the powder dissolved in a litre of water will produce a pound of butter. It is recommended that the resulting compound should bo mixed with a pound of real butter, but this is not absolutely essential. It is also explained that the careful housekeeper need not give the water-butter to the servants, but can use it on his own table. Commenting on this opoch-nfaking invention, the Vorwarts recommends the food inspectors to keep a sharp eye on the butter retailers to see that they do not mix the powder, which is cheap, with real butter, which is very dear, and so snatch an extra profit.
