Clicoso Cakes: Boat the yolks of four eggs till nearly whito ; add a quartor of pound of castor sugar, and tho juico and grated rind of two lemons. Lino some patty-pans with good pull' pastry; put somo of the mixturo into each, with a tiny picco of butter on tho top, and bako in a quick oven. Gruel is Mado as Follows : Put two tablcspoonfuls of oatmeal into a cup, and mix smooth with a littlo cold water. Add gently to this half-a-pint of boiling water ; put on the lire, and, stirring all the time, boil for quarter of an hour ; strain through a line siovc, and servo very hot. It can bo sweetened to taste and flavoured with lemon or nutmeg, as tho patient likes. Apple Trifle: Whip tho yolks of four eggs with a littlo castor sugar, add a pint of hot milk, put all into a saucepan, and stir till it begins to thicken, then placo it aside to cool. Have ready a pint of apple sauce, sweetened and flavoured with lemon, into which whip the whites of the four eggs, after beating them till quite stiff, Pile on a glass dish, aud pour the cold custard round. Oatmeal Biscuits: Half a pound of Hour, quarter of a pound of oatmeal, two ounces of lard, or dripping, one tablespoonful of soft sugar, quarter teaspoon - l'ul of carbonate of soda, one egg, a little cold water. Put tho oatmeal and the Hour in a basin, and add tho sugar and the soda. Melt tbe lard a little and beat up the egg. Mix them together, and add as much cold water as is necessary to make all up into a firm paste. Knead the paste (which should bo dry) for a few minutes, then roll it out quito thinly. Cut this into small round biscuits. Put on a greased oven shelf and bake till dry and hard and a yellow colour. Many prefer these biscuits without sugar to eat with cheese. In that case, just leave out tho sugar, but put in a pinch of salt and make in exactly the same way.
