BREAD STANDARDS

SPECIFICATIONS ENFORCED IN APRIL (P.A.) Wellington, March 1. The emergency standard specification covering the weights, composition, and shape of bread is to be enforced from April 1 under the Breadmaking Industry Control Order, gazetted to-night. The Hon. D. G. Sullivan, in an explanatory statement, said the specification has been prepared by a fully representative committee of the Standards Institute in order to effect conservation in manpower and oven space and concentrate production on a simplified range of loaf shapqs. The types of loaves retained are deemed to be sufficient to satisfy public preference.

Altogether six types of bread are provided for, said the Minister. In addition, provision has been made for the approval of bread to be known as “special” bread, but no nutritional, dietetic or medicinal properties may be claimed for this bread without the approval of the Director-General of Health. The use of colouring matter which involves considerable sugar to no purpose is prohibited. Different districts may bake different shapes in order to satisfy considerations such as the type of tin in use and established public preferences. but the total number of shapes baked in any one district must not exceed the specified limit of six in addition to any “special” loaves approved. The order requires that all loaves shall weigh not less than 21b., except that a minimum weight of lib. 12oz. is stipulated for split loaves.

It will be an offence for bakers or other suppliers of bread to refuse to supply a 21b. white or wholemeal loaf. When such loaves are not available at time of ordering the supplier will be entitled to 24 hours’ notice in the c*se of a white loaf and 48 hours in the case of brown bread. The specification also includes the requirements relating to the quality and the basic constituents of white, wholemeal, brown and wheat germ bread by citing and somewhat amplifying the provisions and regulations 'under the Sale of Food and Drugs Act.
