POPULAR DRINK IN CANADA NEW INDUSTRY FLOURISHES. Received Feb. 9, 6.30 p.m. OTTAWA, Feb. 8. Agricultural officials estimate that Canadians will drink nearly 3,000.000 gallons of canned apple juice in 1941 if the present rate is maintained. This will mark one of the quickest revolutions in consumer food tastes recorded. This signifies a new opportunity ,to growers to dispose of fruit otherwise wasted. The apple juice market has sprung from practically nothing two years ago. Now it is offered cheaply and attractively. A method has been found to preserve the juice in acid resisting cans as clear liquid, retaining the natural apple flavour. The Horticultural Division has practically abandoned a long unsuccessful effort to popularise fermented cider.
