FEATURES FOR DAIRYMEN. Amongst the features of interest to lairymen at the forthcoming Waikato Winter Show wil be a test of merit Trading competition, for which big irizLg are offered, as well as lectures >v well-known authorities on dairying matters states the Waikato Times. Board, managing director of the To Aroha Dairy Company, will discourse on “The Relation of Science to Industry.” There wil also be an important meeting of dairy factory managers when the following subjects will be discussed: —Should milk be graded as well as cream; flavours, butter or cheese; characteristics of butter or cheese; packing of our dairy products; ■instruction of churns anr.l their relation to make and moisture content; byproducts; effects on our products by thc water used; what is being done to assist the rising factory manager; acid development in cheese manufacture; is the dairy farmer getting the right in-

st ruction; lipless hoops* on cheese; can a supplier to a milk factory deliver his ■ milk so that he can benefit in his test; what is the effect on the quality of our butter if broken down with water be- , fore pasteurising; butter boxes and cheese crates, class of timber; are we getting the best results from pasteurising from temperatures usually adopted in relation to the different percentages of fat in cream; is the manuring of pastures causing any trouble in the finished article of our rlairy product. Entries are rolling in from all parts of the Dominion, and in every department they promise to prove a record. Air-humidity is of great importance as it affects the rate of transpiration of plants, and it is a deciding factor in the prevalence or otherwise of various parasitic fungi affecting crops.
