SENDING BACON HOME.
QUESTION OF TEMPERATURE. In connection with Australian shipments of bacon to Great Britain,the question has arisen as to the temperature at- which this produce should be carried. Under the Commonwealth Commerce Regulations, bacon shipped from Australia, has to be carried at a temperature of not more than 20 degrees. Mr Prossor, a visiting bacon expert, from England, has given it as his opinion that to obtain best results the temperature should be 28 to 30 degrees. With this view Mr O'Callaghan and Mr Crowe, dairy experts in New South Wales and Victoria respectively agreed. The Collector of Customs has accordingly been approached-and asked to suspend the commerce regulation in respect of an experiment shipment. This he has agi-eed to do, and arrangements . are being made for a trial shioment at a temperature approximating 28 to 30 degrees.
