The Price of Bread.
How the Baker Profits. The Dunedin Evening Star prints some figures to show how the bakers unduly profit by rises in price of flour. It has been said that bakers’ scale of prices fixed 5d for the four-pound loaf when flour is at £7 a ton, and the Star contends that upon this basis they cannot justify the charge of 7d for the four-pound loaf when flour is at £ll ss. The figures are as follows ; BAKERS’ SCALE PRICES. Flour at £7 per ton and the 41b loaf atsd Standard number of 41b loaves from sack flour 68 Return from 1 ton flour (10 sacks) 680 680 loaves at 5d £l4 8 4 Cost ton flour £7 (less trade discount 8/6, and 10 empty sacks at 4d, 8/4) 6 13 2 Gross profit to baker on 1 ton flour ... £7 10 2 Flour at £ll 5s per ton and the 41b loaf at 7d. 680 loaves at 7d £l9 16 8 Cost ton flour £ll 5s (less trade discount 5/6, empty sacks 3/4) ... 10 16 2 Gross profit to baker 9 0 6 It will thus be seen that the baker makes £1 10s 4d per ton more profit under the higher prices. A baker doing a five-ton business thus increase his weekly profit by over £7 10s when flour at £ll 5s gives him an excuse to charge 7d for the loaf.
