CHEESE MANUFACTURE
IMPORTANT CONFERENCE. DRY MATTER OF CHEESE. Mr F. H. Anderson, who returned from Palmerston North this morning, informs us that the conference hc-ld there yesterday was attended by a large number of representatives of tho dairying industry, over eighty cheese manufacturing- companies recording their vote at the meeting. The meeting decided in favour of a 50 per cent standard of fat in the dry matter of the cheese being the lowest to be shipped out of New Zealand, and also that the standard should be 52 per cent from the Ist of March until the end of July.
The points at issue were very keenly debated by Waikato and Taranaki representatives, and the opinions of Massey College research staff and the heads of the Hawera and Hamilton laboratories were very freely given on the present problems of cheese manufacture. Mr Anderson was of opinion that whilst the decision of the conference did not meet with the approval of the Waikato representatives, the discussions will lead to further experiments which may be of ultimate benefit to the cheese-making industry.
