New Recipes Using Canned Goods. “ Meals in a Alinute,” compiled by Phyllis Lovell, is a handy-sized book that should prove a boon companion to all housewives, for what woman is not at some time faced with the problem of preparing a hasty meal from a more or- less bare cupboard. Phyllis Lovell’s book of modern cookery is designed to meet just such an emergency'. It contains within ninety-six pages a number of easily and quickly prepared menus for dinner parties, every'-day dinners (summer and winter), economy dinners, vegetarian meals, light luncheons, meals for one and meals for an average family, with suggestions also for picnics. While most of the recipes given are applied to canned foods, with few exceptions they' are adaptable to the use of fresh foods and are planned to break the monotony- of meals and present new dishes that will appeal to the jaded appetite. “It has been established by eminent authorities,” states an introductory paragraph, “ that . canning leaves unimpaired and preserved the vitamin content of fresh foods—thus removing a possible prejudice—that the produce packed is invariably the pick of the crop and that it reaches the consumer in a condition of perfect freshness and cleanliness.” The book is published by Alessrs Edward Arnold and Company, London, and is moderately priced.
