Pasteurised Milk.— The .. pasteurising plant which has been erected by the Central Co-operative Dairy Factory Company at the Addington factory, for treating milk IW the local supply, waa tested this mornijjjr. The apparatus consists of a No. 5De -''Laval pasteuriser and cooler, of 400 gals per hour capacity. The milk is run from -the regular receiving tank . into the •pasteuriser, whete it is .heated; to a temperature of about 155 de«?. From tho pasrteuriser it flows over the cooler, by which it 3 temperature is reduced to about Sodeg, and it is then ready for sending out. The., heating and rapid cooling destroy the objectionable bacteria, which were found in even the purest of milk, the cooling also removing any boiled flavour which the milk may have contracted in the heating, -as well as any turnipy or other taste .caused by the nature of the cows' food. The appliances are made of copped, strongly tinned over, and do their work most efficiently. They were supplied and fitted up by Messrs Mason, ■Strnthera and Co., New Zealand agents for. the DeLaval ; separators, &c*. • The pasteurising process does not affect the rising of the cream in the milk, as was stated at the dairymen's meeting. On the other hand, experiments extending over several years have shown that more cream can be obtained from pasteurised milk than from milk as it comes from the cow. A large number of orders for the pasteurised milk have been received, and distribution will probably be commenced next week.
