FOR MARRIED WOMEN ONLY T\O you ever think you’ve married world’s most difficult man to please—particularly when it comes to finding summer sweets he likes? It’s no use asking men what they want. The only way is to try things on them and see if they want second helpings. That’s what I’ve been doing. And I’ve found a number of corn flour sweets that work. There’s nothing so cool and tempting as blancmanges and other corn flour dishes. Here are two recipes that my husband likes. HOW TO MAKE Ingredients: I pint milk, 7 Jozs. Brown Polton Patent Corn Flour, 1 egg, Jozbutter, 2 bananas, llo;s. sugar. Blend the corn flour smoothly with a little cold milk—put the rest on to boil with the sugar. Add blended corn flour, stirring all the time and boil for 3 minutes. Remove from the heat, add butter, egg yolk and bananas mashed to a soft pulp. Beat egg white stiffly, fold in lightly. Turn into a wetted mould and leave to set. Decorate, if liked, with leaves of angelica.
AND HERE’S Ingredients: 7 pint milk, liozs. Brown <5 Polson Patent Corn Flour, 2ozs. sugar, juice and rind of 1 lemon, 1 egg. / * wB ■-••Mu ~ ■ 7 ’* it t Blend the corn flour with a little milk. Put the rest of the milk on to heat slowly with the sugar and thinly-cut lemon peel. When almost boiling, strain on to the blended corn flour. Cook for 3 minutes, stirring all the time. Remove from heat, add the egg yolk and lemon juice very carefully. Beat the egg white stiffly and fold in. Turn into wetted mould to set.
