Pound 41b. grated cheese in a mortar with 2oz. butter, a teaspoonful of made mustard, a dash of white pepper, and sufficient vinegar to make into a paste which will spread easily on bread. It is delicious spread on brown bread, with a lettuce leaf, or between very thin oatcakes or water biscuits. Potato Nests. Make mashed potatoes with

twice the visual amount of butter and a little cream. Whip this potato mixture to a light fluff, and shape with a spoon into the shapes of nests.
