WOMAN JUDGE OF CATTLE
The fact that a woman officiated as judge at the Royal Agricultural Show at Islington, England, gave a new interest to that great institution. She was Miss Ellen Michie, and is schoolmistress of the tiny village of Strood, near Petersfield. Hants. The daughter of Mr David Michie, a well-known judge at dairy shows, she is a fine type of the real country woman, with fresh complexion and frank, cheerful expression. She says that she regards her appointment as a compliment to her father, as she has attended shows in London with him for twenty years. But she has often judged at local shows. She is the first woman to have officiated at the Agricultural Hall, and her special line of examination was Guernsey cattle. Apparently she has filled her office with great success, and has gone back now to her little schoolroom at Strood again—until she is once more asked to undertaken what has always been regarded as a very highly technical man’s job.
The taste of many fruits can be improved wonderfully if the right method of cooking is adopted. Here are some helpful suggestions: —Most dried fruits are improved by adding lemon juice to the water when cooking. This brings out the flavour surprisingly. When serving prunes, crack a few stones and add the kernels to the dish. Always soak dried fruits thoroughly before cooking, to make them tender and of good flavour. Sugar can be saved and the taste of the rhubarb improved if a pinch of carbonate of soda is added when cooking. To keep rhubarb a good colour it is desirable to first boil the syrup separately; then put the rhubarb in a fireproof dish, pour syrup on, and bake in a moderate oven. Rhubarb cut into cubes and cooked in the manner described will not pulp so readily. Orange juice suoplies a delightful “tang” to the flavour of stewed apples. _______
