GRAPE FRUIT SOLID
Grape fruit solid is a delicious summer sweet. Place the flesh and juice of two grape fruit and two oranges into a bowl, accompanied by the thinly-pared rind of half a grape fruit and the same of orange. Add 4oz. of lump sugar and pour over S-pint of boiling water. Cover the bowl and steep for an hour. Cut eight penny spongecakes into squares, put them into a glass dish and strain the fruit juice over them. Leave to soak, but occasionally baste. Melt a half-pint packet of raspberry jelly, only use half the quantity of water directed. When stiff, chop it. Whip to a froth a small carton of double cream and with the cream and jelly decorate the surface of the cakes. Finish with a few ratafia button biscuits arranged on the cream. Lemons may be substituted for the grape fruit, reducing the expense.
