t * X BEETROOT MOULD * * * x ❖ 4. 2 average-sized beets, 1 small *> *> lettuce, 2 dessertspoons gelatine, * * lh cups hot water, h cup vinegar, £ % pepper, salt and sugar to taste. ❖ * Cook beetroot till tender and £ *£ cut into slices. Line a fluted mould with the slices, then fill ❖ * centre with small dice-shaped X £ pieces of beetroot. Dissolve the 4* 4> gelatine in hot water. Add ❖ * vinegar, pepper, salt and sugar. X X Pour over the beetroot and al- 4* 4* low to set.
