CHOCOLATE CAKE Melt 40~ chocolate in a double saucepan. Add \ cup sugar and J cup milk. Stir until smooth, then add the yolk of 1 egg and cook until mixture thickens. Allow to cool while making the cake. Cream cup butter until light, then gradually add I cup castor sugar and continue to beat until light and fluffy. Add 1 well-beaten egg, then add 1 level cup plain flour, sifted with 1 level tablespoon rice flour, I level teaspoon bicarbonate of soda, a pinch of salt. Add this alternately to butter mixture with J- cup sour milk. Lastly add chocolate mixture with a few drops vanilla essence. Bake in a toell-greased and lightly-floured tin for 35 to 40 minutes. Turn out on to a cooler and ice with chocolate icing.
