TO COOK CABBAGE Wash thoroughly under running water- Never soak. Drain and cut up a little more coarsely than you would lettuce. Place water into a saucepan to a depth of one to one and a-half inches. Add salt and bring to boil. When boiling add chopped cabbage. Boil 15 to 20 minutes, not longer. Drain thoroughly and serve. Cabbage should be crisp and green, and with a delicate flavour. Try this way of cooking cabbage and be agreeably surprised. It is good, and not a bit like the cabbage you get in hotels and boarding houses. ' SARAH.
