TODAY’S RECIPE

PINEAPPLE DELIGHT 2 tablespoons (2 ounces) gelatine, i cup cold water. 2 egg whites. | cup (2 ounces) sugar. 1 cup pineapple juice. i cup lemon juice. j cup pineapple. Soak gelatine in cold water. Add to boiling pineapple juice and lemon juice. Stir till all dissolved. Pour into bowl. Leave till cold and nearly set. Beat till white and frothy. Add pineapple pulp, and leave if necessary till nearly set. Beat again. Whisk egg whites very stiff. Add sugar, and fold immediately into pineapple mixture. Pile on to dish. Garnish with pineapple and cherries, and serve with whipped cream or a soft custard made from egg yolks. SARAH.
