Chocolate, Cream Drops. —Boil 2 cups best white sugar with 1 teacup of water or milk from 5 to 10 minutes, and add one teaspoon essence vanilla. Place the pan in a basin of cold water, beat until stiff enough to make
into drops, shape and put away to dry on a buttered dish. Melt some chocolate over the kettle with a little fresh melted suet, and drop the creams in one at a time with a fork. Place on a buttered dish to dry. Plain Cake. — Beat 1 large level cup sugar to a cream, with f lb butter or dripping. Add the grated rind of a orange or lemon or any essence desired to flavour, then three well beaten eggs, the same cup of milk, and two heaped cups of flour with 2 level teaspoons powder sifted lightly in. Any fruit may now be added, about 1 cup chopped figs, sultanas, or currants. Bake in a moderate oven about If hours.
