RECIPES.

Cheese Balls. —Cheese balls are easily made, and are delicious served hot with a salad. To one cup of grated cheese add half a cup of grated breadcrumbs, five drops of Worcestershire sauce, and one egg, well beaten. Mix the ingredients well together, and roll the mixture into small balls. Place the balls into a wire basket, and just before it is time to serve them plunge the basket into boiling fat, cooking to a light brown, and serve. A Toothsome Dish.-—Put to boil a pint of sweet milk, add to it one tablespoonful of butter, two tablespoonfuls of flour, wet in a little cold milk, with one quarter of a pound of cheese, cut small. When the cheese melts set it off the stove, and season with salt and pepper to taste. Beat four eggs separately, and stir into the cheese mixture. Pour into a buttered pan, and bake twenty minutes, allowing room to rise.
