When Breakfast Arrives
THE appearance of the breakfast tray —for those who are lucky enough to have their breakfast in bed —is au important event. A daintily served meal can be at once the con solution for waking up to another dull morning, and the preparation for the strenuous affairs which are to follow. There is bound to be a certain monotony, but even this can become a source of pleasure if all the simple ingredients of the meal are served to perfection—fruit juice in sparkling glass, a pretty breakfast service, an “individual” butter-pot and a rack of well-made toast.
Eor many people this is suflicient; others require something more sub stantial. This should be a small and tempting morsel, neither insipid nor too strongly flavoured. A fish souffle is an ideal dish. All that is needed for this is a few flakes of cold white fish—made into a paste with the sauce .with which if was served —and an egg, white and yolk to be beaten separately. The mixture is poured into a souffle dish to bake until it is risen and set. Serve ns quickly and as hot as possible. '
