pOIXTR that people appreciate most ab.out good sandwiches are interesting flavor, ample nourishment contained in a small space, and ease of handling. In most eases fillings for sandwiches are much more successful when chopped, grated, minced, or pounded (according to their character and consistency) than when sliced. 1. —Chopped or minced' beef or lamb, bread and butter, salt and popper; and chutney, chopped gherkins, or finely shredded lettuce or watercress mixed with a salad cream or mayonnaise. 2. —Dates and figs chopped finely and spread between slices of bread and butter. • r l.—Finely sliced apples, grated chocolate, and white bread*and butter. «, 4.—Chopped or minced veal, mild pickles, and broad and butter. s.—Minced or grated, ham or tongue, mustard, bread and butter, and shredded lettuce or watercress. (5. —Minced chicken mixed with chopped olives or cucumber or gherkins, of a mixture of all three, salt, and pepper, and bread and butter. 7. —Orated cheese mixed with nuts and chopped olives, or simply spread between buttered biscuits or bread. 8. —Hard-boiled eggs mixed with cucumber, or mereiy seasoned judiciously, moistened with sauce, salad cream, or mayonnaise, and spread on buttered bread. tt. —Fish finely flaked, freed from skin and bone, mixed With white sauce or mayonnaise or cucumber sauce, seasoned, and used to fill small buttered rolls. 10.—Walnuts, toasted in the oven, skinned, finely chopped, mixed' with mayonnaise or thick cream, well seasoned, and spread between slices of white bread and butter.
