pOLLOWING are recipes which the housewife should find useful:— Butterfly Cakes. Ingredients.— Jib. blitter, l teacup sugar, 2 eggs, 2 cups of flour, 2 teaspoons Edmonds’ baking powder, and l tablespoon milk. Method. —Beat butter and sugar to a cream, add eggs well beaten, then flour and linking powder mixed, and lastly milk. Half fill paper eases with mixture, place on cold oven shelf and bake .15 minutes in good oven. Alien cool slice small piece off the top of each, put a teaspoonful of whipped in cant on, cut piece in half and siaud pieces up on edge ou whipped cream. If desired, decorate with small pieces of jelly. Short Pastry.
Ingredients.—Two breakfastcups of flour, 1 teaspooiilul of Edmonds baking powder, Mb. butter, lard or dripping, pinch of salt, and cold water. Method. —Sift flour, rub in butter or dripping, add baking powder and suJt. Mix with enough water to mane a firm paste. Use as required. Bane in a quick oven. if liked, 2 teasroontuls of sugar may be added to this pastry for sweet dishes. Apple Dumplings.
.Ingredients.—Half cup of flour, l teaspoonlul of Edmonds' baking powder, 3 apples, 1 cupful of suet (y.uopped), 4 cupful breadcrumbs, j teaspoonful of salt, and 3 dessertspoonfuls of sugar. Method. —Prepare apples, mix flour, sum, breadcrumfls, batting powder anu .‘•'alt together, add water u> malic a paste. Place a piece of paste around each apple, pm dosscrispoonnil oi •■mgar in each, then cover h.e top. Pul dumplings loose into a pan Oi uuu.d-g water; when they come to the surface gii e them half an hour.
