INFANT FEEDING.
Dr Truby King bas issued tho following memorandum m explanation of certain details connected with preparing humanised milk. Questions asked by mothers show tbat m some quarters the information is needed : — Milk used for infants should be as .fresh as possible, and should be obtained within a few hours of the time ol milking. No attempt should be made to set milk for tho purpose of getting cream to rise unless Lhe mother is satisfied that the milk she receives is clean and fresh. Bacterial growth takes place with great rapidity m milk, and is the principal cause of disease m infancy. In towns, especially during summer, it is safest to buy creamseparated milk and whole milk, and to prepare at once the food supply needed for 24 hours. When it has been prepared aifd heated to 150deg, the mixture should be cooled rapidly by plunging the jar m water (preferably running water) until the contents register as low as 60deg. Then place the jar m a proper cooling box, or if this is not at hand, m a cool safe. At the end of 12 boms the jar containing the remainder of the mixture should be again placed m a saucepan of water and heated until the contents register 150deg. Recipe for one pint and a half of whey mixture (humanised milk) : — oz. Whole milk 6 "40 per cent, cream" (i.e., ordinary good cream 2£ Whey ... 15 Lime water ... 1& Sugar of milk ... 1 Boiled water 5 It cannot be too strongly insisted upon that the pure whey must be heated by itself to 150deg before it is added to the other constituents. If this is not done, the mixture will curdle. When all the ingredients have been mixed, the whole must be again heated to 150deg.
