"MILK" FROM SOYA BEANS

“Milk” from soya beans, made by grinding; the beans, soaking the meal in water, boiling and then straining, has been used to make sherbet at lowa. State College (U.S.A.). Made in the usual way except tor the substitution of soya bean milk for cow’s milk, the dessert was pronounced equivalent to the regulation article in taste. Soya bean milk has long been used in China for feeding children end for producing a variety of soft cheese.
